An Easy, Quarantine-Friendly Recipe for a Blueberry Cashew Butter Breakfast Bowl


Blueberry Cashew Butter Breakfast Bowl



1/2 cup frozen blueberries

1/2 cup frozen strawberries 

1-2 frozen bananas 

1 handful of fresh or frozen spinach (spinach blends easily and it’s a super easy way to sneak greens into meals)

1 serving plant based protein of choice (pea protein, hemp protein, unflavored or vanilla flavored)

Up to 1/4 cup plant milk of choice (We love cashew or flax milk but the choices are endless. I say ‘up to 1/4’ because the thickness of your smoothie bowl is personal preference)

Heaping TBSP of cashew butter



Combine all ingredients except for cashew butter in high power blender

Blend away! Since the consistency we are going for is to be eaten with a spoon, you may have to blend for longer than you would for a shake or smoothie.

Pour into a bowl, drizzle with cashew butter and enjoy!

You can also add sliced fruit, hemp seeds, pumpkin seeds, dried fruit, anything! 

This breakfast is full of fiber, protein, and healthy fats.
